Tteokguk is a traditional Korean soup made with sliced rice cakes in a clear, flavorful broth. An essential dish for Seollal (Korean New Year), it symbolizes a pure new beginning and a prosperous year ahead.

📋 Ingredients (for 2-3 people)
- 500 g of rice cakes (tteok), thinly sliced.
- 7 cups (1.65 L) of water
- 300 g beef (shank, or flank) roughly chopped
- 3 to 4 cloves garlic, minced
- 1 large scallion, cut into thin diagonal slices
- 2 tsp vegetable oil
- 2 eggs
- 1 tbsp fish sauce or soy sauce.
- 1 tsp roasted sesame oil
- ½ tsp ground black pepper
- 1 sheet of Gim seaweed, toasted and crumbled
- 1 red chili (optional), thinly sliced

🥢 Preparation Steps
1️⃣ Prepare the broth
🍲 The base of a flavorful Tteokguk!
- Boil 7 cups of water in a large pot over high heat. Add beef and garlic, then cook for 5 minutes.
- Reduce to medium heat, cover, and simmer for 20-25 minutes, until the beef is tender and the broth is fragrant.

2️⃣ Prepare the garnishes
🍳 Colorful touches to enhance your soup.
- Toast the nori: Pass the gim sheet over a flame or on a hot pan until it turns green and crispy. Place it in a plastic bag and crush it into fine pieces. Set aside.

Prepare the thin omelet: Separate the yolks from the whites of the two eggs. Add a pinch of salt to each bowl and mix with a fork.
- In a heated non-stick pan lightly oiled, pour the yolk mixture and spread it thinly by tilting the pan.

- Cook for about 1 minute, flip, then cook for 1 more minute. Remove from heat, let cool, and cut into thin strips. Set aside.
3️⃣ Cook the Tteokguk

- Add the rice cakes (tteok) to the boiling broth with the fish sauce or soy sauce. Stir gently with a ladle.
- Cover and cook for 7-8 minutes, until the cakes float and are tender.

- Pour the egg whites little by little into the soup, without stirring, to create a stringy effect. Cook for an additional 30 seconds.
- Stir in the sesame oil, black pepper, and chopped scallion. Stir gently and remove from heat.
4️⃣ Serve the Tteokguk
