These sweet potato starch noodles, called dangmyeon, have a vermicelli-like texture. They are thin, transparent, and absorb the flavors of accompanying ingredients well. These noodles are particularly popular in Korean cuisine for making the famous Japchae noodle dish.
How to prepare Dangmyeon noodles?
Allow for approximately 100g of dry noodles per person. Bring a pot of water to a boil and add the noodles. Cook for 6 minutes, then drain and rinse thoroughly with cold water. The noodles prepared in this way can then be incorporated into hot recipes, for example by stir-frying them with marinated vegetables to make Japchae. They can also be used cold, in a fresh summer salad, garnished with cabbage, cucumbers, and spring onions.
