All about Gochujang

Discover Gochujang: The essential Korean fermented chili paste.

Reading time: 3 minutes

Introduction:

In this era of culinary discovery, gochujang, a spicy Korean condiment, is rapidly gaining global popularity. Valued for its unique flavor and versatility, this fermented chili paste offers a burst of taste in many dishes. It is the flagship condiment used for Tteokbokki recipes or Bibimbap sauce, for example. In this article, we will delve into the history of gochujang, its ingredients, health benefits, and how to use it to enhance your favorite recipes.

1/ Origin and history of gochujang:

Gochujang, this iconic Korean condiment, dates back hundreds of years of culinary history. It seems that it was once made with black pepper before red chili was introduced to Korea by Portuguese sailors. It was only after the arrival of red chili by these merchants that traces of the condiment we know today began to appear. It is now a staple of Korean cuisine.

2/ Composition and taste of our gochujang:

Gochujang is generally prepared from glutinous rice paste, soy powder, malt syrup, salt, and of course gochugaru, which are heated, mixed, and left to ferment in large jars. The fermentation process, which can last for months, gives this spicy paste a unique depth of flavor.

Champs de jarres de fermentation de gochujang artisanal

Our artisanal gochujang is made by Jookjangyeon, a renowned artisan in Korea and also recommended by Chef Hooni Kim in his cookbook "Ma Corée" published by Hachette in 2022.
They chose not to use soy powder anymore, to ensure better stability for their gochujang. Jookjangyeon gochujang is therefore unique with an absolutely inimitable taste. This paste has a smooth and consistent texture, with a magnificent dark red color. On the palate, the heat of the chili is softened by the sweetness of the glutinous rice paste, and enhanced by the fermentation process, which gives it an exceptional length.
It is obviously a spicy condiment, but unlike other Asian sauces such as sriracha, it is a sauce that will not "burn" the palate and enhances dishes without overpowering other ingredients. To start, use it sparingly until you form your own opinion.

3/ Health benefits:

Beyond its incomparable taste, gochujang can also be beneficial for health. The red chilies used in its preparation are rich in vitamins A and C, as well as capsaicin, a powerful antioxidant. Capsaicin has demonstrated anti-inflammatory properties and may help boost metabolism. As is often the case with good things, it is important to consume it in moderation, as overconsumption can be irritating to the stomach.

4/ How to use gochujang in cooking:

The versatility of gochujang makes it a major asset for cooking enthusiasts. Here are some ideas for incorporating it into your dishes:

Marinades: Mix gochujang with toasted sesame oil, soy sauce or doenjang (the other emblematic Korean fermented condiment), garlic, and ginger for a delicious marinade for meats, fish, or vegetables. This is the recipe for homemade Ssamjang.

Sauces: Create flavorful sauces for your stir-fries by combining gochujang with rice vinegar, honey, and sesame oil.

Soups: Dilute a spoonful of gochujang in your soups to give them a spicy and deep touch.

Mayonnaise: Prepare a delicious gochujang mayonnaise for a successful Franco-Korean mix. Make the classic mayonnaise recipe by replacing mustard with gochujang and a few drops of rice vinegar.

Rice dishes: Season your rice dishes with gochujang for an authentic Korean flavor.

Along with Bangyudang sesame oil, Jookjangyeon gochujang is, in my opinion, the most suitable Korean product for everyday cooking. It is a delicious paste whose uses go far beyond European cuisine. Try this paste with hard cheeses, or even dark chocolate.
