The manufacturing process is complex and very precise, and the fermented soybean paste takes a little over a thousand days to be made. The only ingredients used are soybeans, water, and salt.
The soybeans are first sorted and then washed. They are then boiled in large metal cauldrons heated over a wood fire.

The boiled beans are then pressed into small blocks of soy called Meju, which will be suspended for several weeks, hung by braided rice straw, which will trigger an initial fermentation.

The Meju will then be placed under the rice straw for several weeks to trigger a second fermentation. After these two fermentations, the Meju is placed in jars with a brine composed of valley water and sun-dried sea salt to activate a third fermentation, which will again last several months. At the end of this stage, the paste that rises in the jar will be filtered and separated from the water at the bottom. The two materials will be placed in separate jars for several years of maturation.

The paste will become doenjang, the recovered water will become ganjang, the soy sauce. This way of making doenjang is what gives it its powerful yet pure taste.
Unlike industrial producers and other brands, Jookjangyeon only uses traditional methods in its production: wood-fired cooking, terracotta meju molds. This doenjang is absolutely unique.
