Korean fried chicken is so famous that it's a must-try recipe! It's the ultimate dish for evenings with friends, especially with a cold beer.
Like french fries, one of the secrets of this recipe lies in frying the chicken twice to achieve maximum crispiness.
This chicken is served with a delicious spicy sweet and sour sauce called Yangnyeom.

Ingredients:
Chicken:
- 1.5 kg chicken pieces (either a whole chicken cut into 8 pieces, or several pieces such as 8 wings and 4 thighs).
Brine:
- 3 red chilies
- 10 cloves garlic, crushed
- 2 tablespoons fresh minced ginger
- 1 tablespoon salt
- 100 ml soy sauce
- 1 liter water
Sweet and sour sauce:
- 2 cloves minced garlic
- 100 g gochujang (fermented chili paste)
- 100 g ketchup
- 50 g honey
- 2 tablespoons soy sauce
- 2 tablespoons Mirin
- 1 tablespoon rice vinegar
- 2 tablespoons sesame oil
- 100 ml water
- 1 tablespoon glutinous rice flour
Breading:
- 180 g cornstarch or potato starch
- 60 g glutinous rice flour
- 60 g wheat flour

Korean Fried Chicken Recipe:
Start by preparing the brine. Mix all ingredients and set aside in the refrigerator.
Place the chicken pieces in this brine for 1 to 2 hours, chilling.
Meanwhile, prepare the spicy sweet and sour sauce by mixing the sauce ingredients, excluding the rice flour, garlic, and onion. Heat the sliced onion and garlic in a saucepan, and add the mixed sauce just before it browns. Bring to a boil. Dilute the rice flour in a little water and add it to the mixture, stirring. Turn off the heat and set aside.
After 1 or 2 hours of marinating, drain the chicken pieces for about ten minutes in a colander, and discard the used brine.
Mix the flours to make the breading and coat the chicken pieces. Make sure all sides are well floured. Tap off any excess.

Heat oil in a deep fryer to 170 degrees Celsius. Fry the chicken pieces for approximately 5 minutes.

Remove the pieces and let them rest on a wire rack for 5 minutes before frying them a second time for about 3 minutes.
Brush the fried chicken pieces with the sweet and sour sauce and serve immediately!
