- 1 kg chicken thighs and drumsticks (bone-in)
- 600 g sweet potatoes, cut in half lengthwise
- 1 bunch of spring onions, cut into 3 cm pieces
- 1 tablespoon dried shiitake mushrooms
- 1 to 2 tablespoons doenjang (fermented soybean paste)
- 2 tablespoons soy sauce
- 2 tablespoons sesame seeds
- 1 tablespoon rice vinegar
- 2 limes
- 200 ml boiling water

🔪 Preparation
1. Preheat.
Preheat your oven to 180 °C (Th. 6). Boil water in a small saucepan for the mushrooms.
2. Prepare the vegetables.
Zest one lime, peel the sweet potatoes, then cut them in half lengthwise. Cut the spring onions into 3 cm pieces.
3. Brown the chicken.
In an oven-safe Dutch oven, heat a drizzle of oil and brown the chicken pieces for 10 minutes over medium heat, turning them regularly so they are golden brown on all sides.
4. Prepare the mushrooms and sauce.
Rehydrate the shiitake mushrooms in a bowl of boiling water for 10 minutes, then drain them.
In a bowl, mix the mushrooms with the doenjang, soy sauce, rice vinegar, and 200 ml of boiling water. Mix well until you get a smooth sauce.
5. Assemble the dish.
After 10 minutes of cooking the chicken, add the sweet potatoes, spring onions, and lime zest to the Dutch oven.
Pour the doenjang sauce over everything, then turn the chicken pieces to coat them well. Arrange them skin-side up.
6. Bake.
Place the Dutch oven in the oven and cook for 45 minutes, until the chicken is well roasted and the sweet potatoes are tender.

7. Finish and serve.
Remove from the oven, squeeze the juice of one lime over the dish, and sprinkle with sesame seeds.
Serve hot with rice and some stir-fried vegetables.
