- 300 g dry dangmyeon noodles
- 1 green bell pepper
- 1 red bell pepper
- 2 carrots
- 2 onions
- 2 cloves minced garlic
- 100 g sliced shiitake mushrooms
- 2 tablespoons sesame oil
- 2 tablespoons sesame seeds
- 2 tablespoons sugar
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt

- Cook time: 15 minutes (plus 1 hour soaking for noodles)
- Total time: 35 minutes (plus 1 hour soaking)
🔪 Preparation

Soak the noodles. Place the dangmyeon noodles in a large bowl of cold water and let them soak for 1 hour.

Prepare the vegetables. Julienne the bell peppers, carrots, and onions. Mince the garlic cloves and shiitake mushrooms.

- Sauté the vegetables. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the onions with a pinch of salt and sauté for 2 minutes. Add the carrots, season lightly with salt, and sauté for 2 more minutes. Add the bell peppers and shiitake mushrooms, then sauté for 3 to 4 minutes, stirring well to soften the vegetables without browning them. Set aside.
- Prepare the sauce and noodles. In the same skillet, pour 500 ml of water, sugar, soy sauce, and minced garlic. Bring to a boil. Add the drained dangmyeon noodles and cook for 5 minutes, until the noodles are tender.

Mix the vegetables and noodles. Incorporate the reserved vegetables into the noodles in the skillet and continue cooking for an additional 2 minutes, or until all the water has evaporated.

- Add the sesame touches. Transfer the noodles and vegetables to a large dish. Add 2 tablespoons of sesame oil and sprinkle with sesame seeds.
- Serve. Mix well and serve immediately, hot.
