🍖 Beef Bulgogi: The Flavorful Korean Barbecue Recipe

Bulgogi (불고기), literally "fire meat", is one of the most iconic Korean recipes. Its sweet and savory marinade and quick cooking make it an irresistible dish, perfect for a large gathering. This non-spicy dish, often associated with the famous Korean barbecue, is distinguished by the thinness of its beef slices and the richness of its flavors. By following this recipe, you will learn how to prepare a Beef Bulgogi worthy of the best Korean restaurants!

📝 Ingredients:

For the marinade:

  • 3 cloves garlic, crushed
  • 1 cm ginger, minced
  • 1 ripe pear
  • 1 onion
  • 6 tablespoons soy sauce
  • 1 teaspoon sesame oil

For the dish:

  • 500 g thinly sliced beef (sirloin, short ribs, beef brisket)
  • 1 leek white
  • 1 carrot
  • 1 onion

👩🍳 Preparation:

1️⃣Make the marinade:
Blend the onion, garlic, ginger, and pear. Add the soy sauce and sesame oil. Blend until you get a smooth, liquid marinade.

2️⃣Marinate the meat:
Check that your beef slices are very thin, and slice them thinner if necessary. Add these beef slices to the marinade. Let rest for about 20 minutes.

3️⃣Prepare the vegetables:
While the meat is resting, cut the carrot, leek, and onion into very thin julienne strips.

4️⃣ Add the vegetables to the marinade:
Add the vegetables to the marinated meat and mix. Let rest in the refrigerator for an additional 20 minutes.

5️⃣ Cooking:
Heat a large pan over high heat. Pour in the meat and vegetables with their marinade. Cook quickly, stirring until the meat turns golden brown and the sauce thickens slightly.

6️⃣ Serve:
Enjoy immediately, accompanied by steamed white rice or lettuce leaves for a balanced and flavorful meal. Ideally, place the cooking pan in the middle of the table to allow your guests to serve themselves as they wish.

💡 Tips:

  • Where to find the ideal meat? Ask your butcher for a piece of beef that can be thinly sliced like carpaccio, or slices of brisket. Here, the texture of the short rib slices I used for my recipe.

  • Perfect accompaniment: Bulgogi is delicious served with banchan (small Korean side dishes) such as kimchi or marinated vegetables.
  • Importance of soy sauce: As you've noticed, there are actually very few ingredients for this recipe, and a very short cooking time. To give maximum flavor to your marinade, and ultimately to your dish, I strongly recommend using an artisanal soy sauce, which will bring an incomparable umami to your dish!
