A grilled cheese is simple, quick, and often improvised with whatever you have on hand. But when you add kimchi and a strong cheese, it becomes something else entirely!
So here is my very personal recipe for Kimchi Saint-Félicien grilled cheese, a successful marriage between Korean spice and acidity and the gentle power of the Rhône-Alpes region!

📝 Ingredients (for 2 sandwiches)
- 4 thick slices of sandwich bread (from the baker if possible)
- 2 tablespoons of kimchi cabbage cut into strips
- 80 to 100 g of strong or melting cheese (Reblochon, Saint-Félicien, Saint-Nectaire, or mozzarella)
- Soft butter for cooking
Preparation
Prepare the bread
Butter both sides of each slice of bread.
Toast the slices
In a medium-heat pan, brown the slices on both sides.
Assemble the sandwich
On a browned slice, arrange the cheese in pieces, then the drained kimchi in strips.

Close with the other slice.
Final cooking
In the same pan, still over medium heat, cook for 2 to 3 minutes on each side, until the cheese is melted. Press lightly at the end for a crispy effect.
Cut
Cut the sandwich into two triangles and serve immediately.
