We are inspired by a recipe from Ottolenghi's book "Extra Good Things", a recipe featuring gochujang, in a delicious combination with peanut butter.

The sauce is absolutely delicious, and you can truly use it on any green vegetables. It's so good, it's the perfect way to get your kids to eat their greens...

Ingredients:
- Two heads of broccoli
- Olive oil
- One lime
- 50 g peanuts
- Soy sauce
- Brown sugar
- 100 g peanut butter
- 30 grams artisanal gochujang
- 2 cloves garlic
- 1 teaspoon fresh grated ginger
The recipe:
Caramelize the peanuts
First, prepare the roasted peanuts by heating the peanuts, one teaspoon (tsp) of sugar, 1 tsp of soy sauce, and 1 tsp of oil in a small pan. Reduce the sugar and stir to coat the peanuts in the glaze (about 2 minutes).

Then, bake the peanuts in the oven for 10 minutes (set to 160°C), take them out, and let them cool.
Cooking the broccoli
Wash and separate the broccoli florets, then steam them for 3 to 4 minutes or cook them in a pot of boiling, salted water. Drain, and mix with a drizzle of olive oil and a squeeze of lime juice.
Preparing the peanut-gochujang sauce
Finally, prepare the delicious gochujang sauce. In a bowl, whisk together the peanut butter, gochujang, garlic, ginger, 1 tablespoon (tbsp) of soy sauce, 2 tbsp of lime juice, and 2 tbsp of water.

The texture should be smooth at the end.

Plating
Serve by spooning some sauce and peanuts over the broccoli, served warm or cold!
