The Seoul Burger recipe in collaboration with Kaffee Berlin

Kaffee Berlin X Korea Store Collaboration

In October 2023, we are delighted to collaborate with the Kaffee Berlin restaurants in Lyon by co-creating a Korean-inspired burger with spicy pork belly. This burger will be available on the menu of all Kaffee Berlin restaurants in Lyon until the end of October.

We'll tell you everything you need to make the recipe directly at home!

For 4 burgers:

Ingredients:

  • 4 beautiful burger buns.
  • 1/2 cucumber, sliced.
  • 4 large lettuce leaves.
  • 400 grams of skinless, degreased pork belly, cut into 0.5 cm thick slices, then into 4 cm pieces.
  • 30 ml soy sauce.
  • 30 grams powdered sugar.
  • 20 grams gochujang.
  • 1/2 teaspoon gochugaru.
  • 1 sliced spring onion.
  • 2 crushed garlic cloves.
  • 2 tablespoons mirin.
  • 50 grams homemade mayonnaise.
  • 20 grams gochujang for the sauce.

Recipe:

- Make a marinade by mixing the soy sauce, sugar, 20g of gochujang, gochugaru, spring onion, garlic, mirin, and place the meat in it, mixing well. Refrigerate for at least 4 hours.

- Mix the mayonnaise with the remaining 20g of gochujang and set aside. This will be the burger sauce.

- Cut the buns in half and toast them in a pan.

- Cook the meat in a pan or on a griddle, stirring regularly, until the meat is cooked through.

- Assemble the burger by spreading the bottom bun with gochujang mayonnaise, then adding a lettuce leaf, the meat, 4 cucumber slices, and finally placing the top bun, also spread with gochujang mayonnaise.

- Serve immediately, with fries, or why not with kimchi.
