This special flour for dumplings and mandu is designed to make flexible and elastic dough, ideal for homemade dumplings. Made from wheat flour (88%), tapioca starch, and wheat gluten, it offers a perfect texture that is both resistant and melting after cooking. Perfect for preparing Korean mandu, Japanese gyoza, Chinese jiaozi, or other Asian dumplings, it allows you to create your own creations with the filling of your choice.

Preparation method

  1. Mix 500g of flour with 220 to 250ml of water depending on the desired texture.
  2. Knead the dough until it is homogeneous and smooth.
  3. Let it rest for 15 minutes under a clean cloth.
  4. Form a ball of dough and divide it into approximately 10g portions.
  5. Flatten each portion with a rolling pin to form thin discs.
  6. Fill with the filling of your choice (meat, vegetables, tofu) and close the dumplings using the desired technique.
