Dried Shiitake mushrooms are very popular in Korean cuisine and are used in many dishes for their distinctive umami flavor. They obviously differ from fresh mushrooms, but drying them gives them a very rich flavor. They are one of the three essential ingredients for making authentic dashi (along with dried anchovy and seaweed sheets).

Sliced dried Shiitake mushrooms are easy to prepare: simply rehydrate them in lukewarm water for about 20 minutes, then drain them and use them in your favorite dishes. Sliced dried mushrooms are perfect for soups, stews, stir-fries, and rice toppings.
