This duo brings together two Korean balsamic vinegars from Chosanjung, an artisanal house renowned for its fermentation expertise. One is made exclusively from fermented apples, while the other combines white grape and apple.
A perfect duo to explore the richness of fermented Korean vinegars through smooth, fruity, and gourmet profiles.
Two aromatic profiles, two expressions of fermentation
The apple balsamic vinegar offers a dense, almost syrupy texture, with naturally sweet notes reminiscent of roasted apple and light caramel.
The apple-grape white balsamic vinegar, livelier and more floral, combines the sweetness of white grape with the roundness of apple, for an elegant and well-balanced acidity.
Together, these two vinegars form a perfect duo for creative kitchens and dishes looking for contrast between acidity, fruit, and depth.
How to use these two vinegars?
These vinegars can be used in savory or sweet dishes. They pair very well with roasted vegetables, warm salads, white meats, or grilled tofu, and can also be used to deglaze, marinate, or drizzle over burrata, mashed sweet potato, or even roasted figs. Very recently, I seasoned mashed grilled eggplant with apple balsamic instead of pomegranate seeds, and the result was great! For dessert, they are amazing on aged cheese, apple cake, or a fruity panna cotta.
Their generous texture and fermented character make them high-quality condiments, both for lovers of revisited Korean cuisine and for everyday foodies.
